  1. Chop the onions +the carrots+ the celery in the chopper.
  2. Put the pot on medium heat, and add one small spoon of extra virgin olive oil. 
  3. Add the sticks of rosemary till its smell comes out.
  4. Add the minced meat and start to stir it till its color changes.
  5. Add the mix of the chopped vegetables ( onions, celery, and carrots).
  6. Add the tomato juice, the tomato paste, and the salt and ground black pepper.
  7. Cover the meat and let it simmer on medium heat for 1 and half to 2 hours.
  8. During the meat is cooking, start to boil 2 liters of water to boil pasta.
  9. Follow the instructions on the pasta bag which shows how many minutes your pasta needs to be cooked.
  10. Take two or three scoops of the pasta boiling water and add them to the meat to give some thickness to the sauce.
  11. Use tongs to take the pasta from the water and add it to the meat. 
  12. Stir everything together.
  13. To serve bolognese use a fork to put the pasta first on the plate, then add the meat on top.
  14. You can use any kind of pasta.
  15. You can add some parmesan cheese on the top if you like it ( it is optional).
