Ingredients

  • One chicken (cut into 4 or 8 pieces).
  • One-kilo potato (cut into medium slices ).
  • One big onion (cut into rings).
  • One green pepper (cut into slices).
  • Salt.
  • Ground black pepper (one teaspoon).
  • Tomato juice (two cups).
  • Tomato paste (two full spoons).
  • Butter (one spoon).
  • Stock (two cups).

Directions

  • Put your pot on high heat, and add the spoon of butter.
  • Add the pieces of the chicken to take a nice color.
  • Take the chicken aside, then add the potato and the onion, then stir for 3 to 4 minutes.
  • Make a space at the bottom of the pot to add the tomato sauce and stir it for 2 minutes.
  • Then add the green pepper and the tomato juice.
  • Return the chicken to the pot again. 
  • Add your salt and black pepper.
  • Add two cups of the stock.
  • Cover the pot and keep it on medium heat for 20 minutes or till you are sure everything is cooked about 60% to 70%.
  • Pour all the mixture into an oven pan. 
  • put in the oven for 15-20 minutes or till the chicken takes a nice color.
  • Then serve it with rice or with bread.
  • You can cut the chicken into 8 pieces.
  • You have to stir the tomato paste on the heat for a few minutes, which will give a better taste of the sauce.
  • You can replace the butter with olive oil.
