Bukhari rice with tender grilled chicken recipe
- one whole chicken.
- one tbsp of yogurt.
- one tbsp of tomato paste.
- 1/4 tbsp of chili pepper paste.
- 1 tsp of black pepper.
- 1 tsp of chicken mix spices.
- 1 tsp of cinnamon.
- 1 tbsp of olive oil.
- 1/2 liter of water.
- slice of 1/2 lemon.
- 1/2 stick of rosemary.
- 2 sticks of fresh thyme.
- 2 cups of basmati rice soaked in water for 20 minutes.
- 3 chopped carrots.
- 2 chopped onions.
- 1/2 tsp cardamom.
- 1 tsp cinnamon.
- 1/2 tsp ginger.
- 1 tbsp of butter.
- black raisins (optional).

- In a big bowl mix the yogurt, tomato paste, pepper paste, olive oil, and the spice with salt, until you have a thick paste ( the first trick is having a thick paste will stick to the chicken during the grilling process).
- Cut the chicken from the back and press on the chest to get flat chicken, make one cut in each breast and one cut in each leg to help the marinating paste flavor gets into the chicken meat.
- Put the chicken on the marinating paste in the bowl and start to scrub it for a few minutes, then cover the bowl and leave the chicken for about 2 hours before cooking.
- After marinating the chicken, bring an oven tray put 1/2 liter of water, and add slices of lemon, 1/2 stick of rosemary, and 2 sticks of thyme to the water in the tray. ( the water here will make steam inside the oven which helps in cooking the chicken and keeping it tender at the same time).
- On the tray, put a grill grate on it and lay the chicken on the grill grate, put it in a preheated oven at 180C for 75 to 90 minutes according to your oven.
- In a pot add one tbsp of butter, then add the chopped onions and carrots and the black raisins, and stir them until the carrots and onion become soft.
- Take half of the carrots, onions, and raisins aside on a plate to use later in garnishing the plate.
- Add the washed and soaked rice to the other half of the carrots and onions in the pot, stir it gently, and be careful to not break the rice grains into pieces.
- Add the chicken stock to the rice with salt and cinnamon, cardamom, and ginger.
- keep it on high heat for 2 minutes until it boils.
- Lower the heat and cover the rice, keep it for about 15 minutes.
- Serve the rice on a plate, and garnish it with carrots, onions, and raisins.
