This is how to make delicious chicken mandi

Do you like one pot cooking style? do you like chicken, but you need a new and delicious way to eat chicken. This is what you are looking for Chicken Mandi. In the traditional way of making  Chicken Mandi, the chicken is marinated with spices, for several hours before it is cooked.

 The chicken and rice are then placed in a pot, covered with hot coals, and covered with sand. The dish is slow-cooked in the pit oven, giving it a unique smoky flavor and tender, juicy chicken.

For Marinating the chicken

  • 2 spoonfuls of garlic paste.
  • one cup 170g yogurt.
  • one spoonful of salt.
  • teaspoon of each of these spices( cumin, black pepper, paprika, turmeric, chicken mixed spices).

It is better to marinate the chicken a day before cooking or at least for two hours and keep it in the fridge until the time of cooking.

For cooking the rice
  • 2 cups of long grain rice, washed very carefully and soaked for 30 minutes.
  • 2 cups of chicken stock.
  • one spoonful of salt.
  • teaspoon butter.
For giving color & taste to the chicken
  • Use saffron soaked in a half cup of water for 30 minutes, then take this red water of saffron and mixed it with a spoonful of tomato paste and a teaspoon of olive oil.
  • OR use one teaspoon of the saffron powder with one tbsp of olive oil to brush your chicken and let them to take the golden color.

Instructions

  1. For cooking you can follow the traditional way which is based on cooking everything from the beginning in the oven. 
  2. For this way in a tray or a pot you can use it in the oven, put your rice cover it with the chicken stock, and add one spoonful of salt and a teaspoon of butter on the top.
  3. Dissolve the spoonful of salt in the chicken stock before adding it to the rice.
  4. Then cover the pot with two aluminum sheets, and arrange your chicken on top of the aluminum sheets.
  5. Cover the chicken with another two aluminum sheets. for saving time, I cook the chicken first in a pot with half a liter of water until about 50% cooking.
  6. To give your chicken nice color we use saffron infused and one spoonful of tomato paste with a teaspoon of olive oil, you mix everything together, then brush your chicken with this mixture.
  7. Make holes in the aluminum sheets to have some saffron and tomato enter the rice from these holes.
  8. Then, before serving,  use a piece of heated coal and put it in the middle of the dish, then add little drops of oil on the heated coal then cover it to give your dish a smoky taste.
  9. Another easy  way of cooking is boil the chicken in 1 liter of water with the marinade then put it on an oven tray , brush it with the saffron powder with olive oil and put them in the oven . In a pot on medium heat add one tbsp of olive oil stir the rice with it then add the chicken stock after drain it.
