Chuck: This cut comes from the shoulder and is well-marbled, which makes it ideal for slow cooking.
Brisket: Brisket comes from the breast or lower chest of the cow and has a lot of connective tissue, which breaks down and becomes tender during cooking.
Shank: This cut comes from the lower leg of the cow and has a lot of connective tissue and marrow, which adds flavor and nutrition to the stew.

Short ribs: Short ribs come from the rib section of the cow and have a good amount of marbling and connective tissue, making them perfect for stewing.
Round: This cut comes from the hindquarters of the cow and is leaner than the other cuts, but it still has enough connective tissue to make it a good choice for stewing.
